Head of Operations
Chef Rui Mourão
Our Head of Operations, Chef Rui Mourão, has taught in the kitchen of a top Hospitality College and won various awards in international competitions such as the Culinary Olympics and the Toque D´Or. He was, for 11 years, head of food and beverages at the Praia D´El Rey 5 star Resort in Óbidos; he was also responsible for a total of eight restaurants: five at the Marriott Praia D´El Rey Hotel, two Clubhouses belonging to that same resort, and Argento restaurant. He is the head technician at ARDEMAR and the creator of our Mediterranean fare.
Executive Chef Manuel de Brito
With a wide experience in different kinds of food, Executive Chef Manuel de Brito made his career in several restaurants, such as Sabor Brasil, Martinho da Arcada, Barra Espanhola and Pomodoro.
